I need a restaurant with a “wow this blows my mind factor.” Not necessarily the most expensive restaurant, but it could be. Need to cap it at $500 including drinks and tip but could go higher if it was really worth it. Thoughts?
Top of the Strat restaurant. The View alone is worth it
^ to be honest I can't really think of anything more "wow" unless you're foodies in which case there are definitely better places for the food "wow" factor. But the view is fantastic. And every table has a great view because the restaurant level rotates. Definitely a unique experience.
If you are looking for fancier cuisine then you could start or finish the night at Level 107 at the Strat, which is one floor higher. Views are still awesome and the cocktails are fantastic.

I think if I were looking for a place to celebrate a big anniversary I would do Lago at Bellagio or the Eiffel Tower at Paris (depending which menu looks better to you). Lago is more my style of food. You know your significant other best.

We have done anniversary meals at Eiffel Tower (View and meal), Joël Robuchon and é by José Andrés. For the latter two, great meals, in beautiful venues, but zero view.
Unfortunately, I think that those latter two would exceed the budget, and I am also not sure what is open??
