If you love Olive Garden for one thing and one thing only, I can guess what it is: Bottomless soup and salad. [Yes, I see you breadstick lovers, but that's for another time.] Oh, that OG salad. It's bizarre how something so incredibly simple could be so delicious. I can guarantee it's not the iceberg lettuce fans keep coming back for, but I can make a pretty good guess that it's the insanely addictive dressing.
We wanted to get to the bottom about why the dressing is SO GOOD. For me, it's nostalgic. It tastes like my grandma's classic Italian. But when I went to Olive Garden last month to try to discern what's in their dressing, I knew there had to be something creamy (I settled on mayo) that gives the dressing its signature texture.
What also goes inside: lemon juice, grated Pecorino, and Italian seasoning. The result is a super-versatile dressing that you can make a big batch of and use on greens of course, but also brush it on roasted vegetables or grilled chicken for a special kick.
