We are considering visiting Niagara Falls on the United State's Columbus day weekend, which is Thanksgiving for Canadians. Is this a bad time to visit? Would we have trouble finding places to eat etc? Roughly October 6-10

It will be busy, but it generally is anyhow, and that likely won't be too much of a problem.
Canadian Thanksgiving is not generally as big a deal to Canadians as US Thanksgiving is to Americans. People tend to celebrate with family and friends where they live, but not travel long distances to see family.
Niagara Falls being a tourist area, I would imagine most places will be open even on Monday.
We were there last year and the year before at Canadian Thanksgiving. Its busy but there is really not much difference these days at the Falls at any time of the year. We will also be there this year.
All restaurants near where we stayed were open and some may even offer a traditional Thanksgiving meal.
