The Undertale community measured with doors, but door heights vary among countries, and seeing as Undertale is now also a JRPG, it makes things more complicated. even throughout the game door heights change! I searched for so long for something that is always the same size around the world... and then it hit me. BASKETBALLS. They always stay the same diameter around the world; 9.55 inches, which rounds to 10 inches. In one of Mettaton's minigames you have to defuse 6 bombs. one of them is a BASKETBALL. it stands at a diameter of 16 pixels. meaning 16 pixels = 10 inches, and 1.6 pixels is 1 inch (as 16/9.55 gives out an absurd number). So every pixel is 1.6 inches! Now to measure the characters and multiply by 1.6!!!

they already are, you can just count the first number before the comma as a meter and you're fine.

Only problem here is that we see Asgore(or a dreemurr ancestor that looks identical to him, meaning we can assume similar height) in the intro and he looks to be about twice the size of your average human.I assume he's around 10 feet tall. Unlike the basketball, which is probably only the size that it is so it is easier for the player to identify it as such, I think the intro should be taken as pretty authoritative. I'd be interested to see this analysis done using Asgore's height as a yard stick.

It's not one human, though, we see that Dreemurr standing next to what is clearly an army of humans carrying weapons. And he towers over all of them. The narration talks of a war between monsters and humans, and not between monsters and human elementary school students, so we can safely assume those soldiers are just adults. There's no reason to think they wouldn't be.
