The Granville Island area will soon have a new health-conscious eatery.

A new plant-based specialty sushi restaurant is opening on Saturday (January 8) at #103-1833 Anderson Street on the ground floor of the building that houses the Afghan Horsemen Restaurant on the second floor.

COFU Pressed Sushi is co-owned by Vancouver poet, composer, and visual artist Soramaru Takayama and entrepreneur Akiko Otsuka.

It includes a “sober” bar serving nonalcoholic beer and cocktails.

Takayama told the Straight that COFU might be the only plant-based sushi restaurant and sober bar in all of Canada.

The only other sushi and sober bar that he's aware of was in Montreal and it closed.

Takayama is no stranger to the meat-free food scene. Back in 2015, he cocreated Vegan Pudding & Co., which continues to operate at #101–422 Richards Street.
