Why does Gerson contradict himself?
According to the wiki, these are three of his lines:

-Eh? Fight you?
-Nah, I'm not a hero.
-Never was.

-I'm not a hero.

But then in Pacifist:
Epilogue, Undyne:
-Undyne.
-She's really come a long way since she was a little urchin.
-I used to be a hero myself, back in the old days.

So in Genocide, he says he was never a hero, and in Pacifist, he says he used to be one. Why does he lie in the Genocide? (unless he lied in the Pacifist lmao)
In genocide his attitude is noticeably sour because everyone around him is dying, so he's probably being self-deprecating. In pacifist he is much happier because everybody around him isn't dead, so he takes pride in whatever good he has done and presumably has a brighter outlook.

I think it would be a way to direct your attention away from murdering Gerson, since as an old monster he does not have the same combat capabilities while he was in his hammer swinging prime. After all, who would feel bad about lying to a mass murderer?
Well, Gerson does say you can't kill him there.

I've thought about that too. And I think maybe in pacifist he's embellishing his feats a bit, and in genocide he's downplaying them. I can't imagine there being this glaring of a plothole.

He may be protecting himself. Don't appear to be a threat by talking about your hero past. He's an old man now after all... Still though, he doesn't strike me as a coward.

Well, he was a hero simply because he fought humans during the war and survived. I think during genocide he doubts himself and maybe consider himself a coward because of depression or something.
I don't think anyone was less of a coward than Gerson. He looked death in the eyes and said it'd take more than that to scare him.
