Why do people think that father Alvin is the Knight?
I've seen people talk about it but all I understood is "He religious and he said "angel" and Ralsei's prophecy mentions "Angel's Heaven" therefore he's the Knight trying to cause the Roaring" and I just don't get it
Alvin is also the son of Gerson, and in Undertale Gerson is the only one who seems to know about "The legend of the Delta Rune," whatever the heck that's worth lol
It's not just the bit about the angel, altho that is part of it:

Alvin's father Gerson apparently wrote a famous fantasy book series and passed some kind of "hammer" down to Alvin. Considering the Dark Worlds could be seen as a kind of fantasy, it's possible Gerson had visited the Dark World before, and maybe passed that knowledge down to Alvin. (Plus, a Lightner needs a weapon to make a fountain...Surely a hammer would work as well as a knife.)

Spamton specifically associates the Knight with "communion" before getting cut off - and Alvin is a priest who already brought up communion with Kris before (in chiding them for calling the wine "sick juice" but still).
Combine that with the possible religious motivation of bringing about the Angel's Heaven, and yeah, Alvin looks like he fits the bill.
We don't have enough evidence to be sure yet, but he's my favorite bet.
Another small fact I don't see many point out, in the classroom the Card Kingdom is located, there is a drawing of Gerson on the storage, and that was drawn by Alvin, so there is a small connection there to him and Dark Worlds
Adding on to point 1: Gerson is quoted as saying the ideas for his books came to him in dreams. Given that some characters assume the Dark World is a dream...
Toby fox also came up with his ideas from dreams, the entire game heavily features dreams with a bunch of characters because of this. It has nothing to do with Alvin specifically

Well I guess that makes his dad a writer? I mean it kinda connects to making dark fountains but I still feel like it's bit of a strech. Also don't you need to "stab" the ground to make a fountain? I don't know if you could really "stab" something with a hammer. Also didn't Alvin burry the hammer in Gerson's grave or was that a diffrent hammer?

I mean you can kinda connect anybody that's religious to the communion. Also Spamton's idalog is a bit weird there he says: "SPEAKING OF [[Communion]] KRIS, DID YOU KNOW THAT THE KNIGHT... No, I'm sorry! I'm sorry! I didn't mean to --" Not sure if he was comparing the subject of the Knight to the communion or associating the Knight with the communion directly. Also the word "[[Communion]]" is in brackets so meaby Spamton was trying to say something else?

I still don't understand where people get the idea that opening dark fountains would somehow cause the Angel's Heaven to appear. Why would Alvin also try to cause a cataclism thinking it would summon something that's goint to be banished by the 3 heroes according to a prophecy? If anything it makes more sence to me that the Angel's heaven is something that might cause the Roaring and not the other way around it.

Also if Alvin was trying to cause the Roaring them why would he only limit himself to 1 fountain per day, like is there a cooldown to it or something? Wouldn't he also like want these fountains to not get sealed? Because opening one in the school library which is aplace where people come to everyday seems like a bad idea. Also if he belives what he's doing is good them why isn't he telling people about it and asking them to do the same and instead keeping it a secret and then opening a dark fountain in a public place where people are bound to go?
First off, you're right that Alvin being the Knight isn't a settled, certain thing, and that we could be seeing connections where there aren't any. Metaphorical gun to my head, if I HAD to guess the Knight's identity or Toby will run me over with his toy car, I'm guessing Alvin, but nobody fully fits or fully makes sense as the Knight with the limited information we have right now: it's kinda like trying to predict who the murderer was from only the first two chapters of a mystery novel. (Plus, now that I went back and looked, Queen does say the Knight had a "blade", not just a weapon, so take that for what you will.)
As for your questions about the Angel's Heaven and why fountains are being opened in the way they are, that's a mystery no matter WHO the Knight is. It's clear that the Angel's Heaven and the Roaring are connected, but Ralsei hasn't specified what the Angel's Heaven is, just the Roaring, and even then, I feel like we might discover his info isn't quite right.
(I personally think the angel might end up being either the player or Noelle, and thus "banishing the Angel's Heaven" would be either ending the game for us or stopping Noelle from... accidentally causing the Roaring in an attempt to bring back her sister/father, maybe??? But that's just me making guesses based on themes.)
Whoever they are, we know the Knight is the one opening the fountains. We don't know their motivation for wanting to cause the Roaring, so any character you pick to be the Knight, you have to speculate. I kinda assume, whoever it is, they don't believe the Roaring will be like Ralsei described, cause most people don't want to end the world. Why they're only opening one a day in vaguely public places... Idk, we need our heroes to be able to find them to have a story, lol.
We know the knight uses a knife, even if Gerson used dark magic in the past neither him nor his son could be the knight
Some believe that all the angel stuff is about the religion in deltarune and Alvin is trying to fulfill the prophecy because he is a religious man
But I mean, we know that there is a world outside the town in deltarune already so I don't think it's likely. Because why not any other religious person and just alvin? Why not all the priests become a team and open thousands of fountains
People like drawing conclusions from practically nothing, a large part of the fandom thought kris was possessed by chara in chapter 1’s ending because they had a red eyes, some people unironically believed Ralsei was secretly a girl because he had a pink scarf. Weird theories just kind of form around assumptions, I think this theory is based on a YouTube video though

Spamton mentions communion related to the knight, and if the church doesn't have it, they at least have the sick juice, and the school dark world is said to have been open before, and Ralsei said that one night was forever to him, so a few years in the Light could be milennia in the Dark, so Alvin could have created the Fountain, which would explain the picture in the classroom.
