I will be in Hong Kong for one night in a few weeks and would like to buy a Nikon DSLR (maybe D5000 or D5001). Where is the best place to buy one in Hong Kong? Are they cheaper in HK than in China (Guangzhou)?

Don't buy these expensive items from Guangzhou. The legitimate dealers would be more expensive while you might very well run into questionable goods and sales tactics in China.
The often recommended places are:
DCFever
Wing Shing
Cam2
Tin Cheung
All of them have websites. Ask them to give you the price on the spot. They might give you a discount if you offer to pay cash.
Read this guide as well for what to avoid:
I would also look at Fortress and Broadway Chain stores
We use Wing Shing in Mongkok. Used Nikon in the past but prefer Canon now, they have both.
More expensive in China due to tax. Only grey imports form HK can be cheaper in China, but they often try to sell you parts of the standard package separately, even the battery. If you buy here, buy in HK.
Get familiar with the prices and included accessories before you go. This may vary from country to country. Check prices online. Be aware the warranty might be limited to one year local HK warranty. Not sure how Nikon does it, but other brands do like this in HK. Consider if the savings are still good enough. I know people who made good deals in HK.
Also check the warranty
Fortress has fixed prices but you may be able to negotiate a small discount or add-ins at Broadway. Those are the 2 biggest chains and your chances of buying a gray mkt camera are much lower. Remember - if a deal seems too good to be true, it probably is.
Nikon cameras sold in HK do not come with English user manual. You only get a CD. If you want a hard copy, you will need to print it yourself.
The stores I listed in my original reply should all have prices that beat Fortress and Broadway. They also only sell legitimate goods as far as I know.
Are they cheaper in Hong Kong than in the UK? And if bought in HK, would I be able to get it serviced in the UK i something broke?
I recently (5 weeks ago) bought a bridge camera in the UK (Nikon P500) for approx £288 from Amazon. When I checked in Fortress HK last week it converted to about £315.
