Advice on where to chill for a month…

After a hectic South American tour, we’d like to find a place to chill and enjoy the summer weather in Feb 2024. We are in our early 60’s, enjoy nice restaurants, golf, beach walks, swimming and some gentle hiking. Dont want to be anywhere too urban. We’d be looking to find some self catered apartment/villa - £3-£4k p month. If anyone can offer ideas on possible locations /resorts I can explore that might meet our needs I would appreciate it.
