Ingredients for Black-Eyed Pea Biscuits:

  • 1 cup cooked Colorado black-eyed peas
  • 2 cups flour, plus more for rolling out the biscuits
  • 3 Tbsp baking powder
  • 1 tsp sea salt, plus more for sprinkling
  • ½ cup cold shortening
  • 1 cup very cold whole milk

Instructions for Black-Eyed Pea Biscuits:

  1. Place black-eyed peas into your food processor.
  2. Add in the flour.
  3. Next, sprinkle in the salt and baking powder.
  4. Add in the shortening, one tablespoon at a time.
  5. Pulse the ingredients together until the shortening mixes in with the dry ingredients, creating a crumb texture.
  6. While the food processor is on, slowly drizzle in the milk through the top, a little at a time, until the ingredients just come together. You might not use all the milk and you don’t want to overmix the dough.
  7. Gently roll out the dough on a floured surface until one inch in thickness.
  8. Using a cookie cutter or a knife, cut out biscuits and place on a greased baking sheet.
  9. Top with egg wash or butter and a sprinkle of sea salt.
  10. Bake at 350 degrees for 15 – 20 minutes until biscuits are cooked and golden brown.
