An all-purpose genius and inventor, Kurzweil researched nutrition with the best health prospects, and wisely chose my own--all plants and no more than 10% of calories from fat.

This book could literally save your life.

I've been on medication for hypertension for the last 30 years. My doctor would occasionally tell me I needed to drop a few kilos (5-10), but has never to my recollection ever mentioned the need to reduce sodium in my diet. I take my blood pressure regularly on a machine at home and even on medication it has always hovered around 150/100 or thereabouts for the last few years. On Sunday it was 139/89.

I started reducing sodium in my diet on Monday to under 2000mg a day and now on Friday my blood pressure is 126/77 the best it's been since my mid twenties.

I've also dropped 3 kilos in 5 days simply by adopting a 10% fat approach to my diet. I have only another 5 kgs to go to reach my ideal weight.

I feel fitter more alert, I no longer feel sluggish and tired continually. I wish I'd found this book earlier, but better later than too late.

Atherosclerosis is a disease which is characterized by a progressive buildup of rigid material inside artery walls and channels. Eventually, they become so clogged that blood flow is stopped and the victim suffers a heart attack. This disease is caused by excess cholesterol in the bloodstream and afflicts approximately ninety percent of Americans, though it is a gradual process and may not even be detectable until later life.

Kurzweil cites various studies showing that increased levels of atherosclerosis in the U.S. and other western countries are linked to high levels of caloric fat intake. In much of Asia, fat intake is around ten percent of total food energy consumed, and heart disease there is almost nonexistent. Kurzweil goes on to show that in America, closer to forty percent of caloric intake is from fat.
