Through SV 1919 Ochtendung and TuS Koblenz, Matthias Köbbing made his way into 1. FSV Mainz 05's youth academy at the age of 13. In 2012 he made the move to TSG Hoffenheim, where he remained until 2016. In the under-17s, his coach was Julian Nagelsmann. After spending time at 1. FC Heidenheim and FC 08 Homburg, he was signed up for the 1. FC Köln under-21s in 2020.
In Winter 2021, Köbbing became part of the first-team set-up. "Köbbes" is not just under-15 goalkeeper coach but also responsible for the fines in the first-team. He makes his way to training with Marvin Schwäbe, as both live in Düren. Köbbes is married and has a young daughter.
