We had two dinners at Chef’s Plate. Our wait staff, Omar, Jesus and Jorge took great care of us the first night. I decided to try the ribeye and, unfortunately I was disappointed in it. Lots of fat but also, I’d requested medium-rare and it...was very rare so I just ate around the outside. The set menu offered lots of new items that one wasn’t likely to order so it was good for trying something different. Even though all the plates seem small, you’ll be full by the end of it all. We ate there again on Christmas Eve and Marco was very attentive. We even thought to tell him that we had no other plans for the night and he made sure that none of the courses were rushed. We stuck to the set menu for the evening but did splurge on a bottle of Don Leo Sauvignon Blanc after we advised the sommelier that the house wine we’d tried the first night was not very tasty. The Cauliflower cream soup was delicious. If you typically order your beef medium-rare, consider ordering it medium - I did so and this time it came out perfectly.More

This set place menu restaurant never disappoints. Chef Mariana and her staff Carlos and Gaby always prepared innovative, balanced and delicious seven course dinners. We were there three times during our stay and twice had the privilege of speaking to the Chef (even though I...am sure she was always busy). The waiters, Abner, Omar, Jesus, Jorge and Kevin seem to anticipate our needs and provide seamless service. The restaurant is rather small which gives it an intimate feeling. The meals were varied and always ended with a tasty after dinner chocolate truffle. Bravo.More

This restaurant inside of the Hilton is excellent! The soups, portions, tuna steak, fillet, desserts, and rolls with flavored butters were all cooked and served to perfection. The staff (Jesus, Omar, and Jorge) we had both nights were professional and helpful. It was a very...quiet environment and one of the two nights we had the restaurant to ourselves due to low volume at the hotel. Highly recommend.More

Small plates in a tiny restaurant. Food was out of this world, could have eaten there twice in a row! It cost $89 a couple even on the all inclusive package at hotel which is not good but the food is worth it. We did...have a bad experience while dining there but not really the hotels fault. We were having a great quite fine dining experience for half the meal and then a large group, two tables worth, of loud obnoxious drunks showed up and ruined the atmosphere. The place is tiny and we couldn't even hear our waiters after that group arrived. Very sad for us but it is what it is.More

From the moment we walked in, till the moment we left, the entire staff made us feel so special! Our servers Jorge and Jesus truly went above and beyond to ensure that we had a great dining experience! They were both so attentive, professional, and...super friendly. The food was absolutely fantastic, though our only small disappointment was that when they say a "Seven course meal", I'm expecting 7 different courses. They actually counted the bread and butter as one course, as well as the tiny little sorbet ball to cleanse our palate before our main course. Now, that being said, the $89 minus the $20 discount, is still well worth it for 2 people. As for the courses, the first one was a small portion of shrimp cevice, with a nice presentation. This was probably our least favorite course with the other one being the dessert, a very strange combinationof chocolate mousse with lemon grass which we didn't think matched well together. For the cevice, it was really nice, but too salty in our opinion. The second was the Beef Carpacio and this one was so freaking good. Once again, great presentation, and the dish was just amazing. The next course was the beet root soup, which definitely caught me by surprise, as I didn't expect it to be this good! The main course has to be by far our favorite, as the Veal was cooked and seasoned to perfection! Our chef Alejandro really know how to cook and prepare his food. He was even kind enough to come introduce himself at our table. Overall, this was an excellent choice to go for the extra $ in order to get such an amazing culinary experience. The atmosphere was really romantic, the food was superb, and the staff will go to no end in order to make sure you are well taken care off. Two thumbs way up to Jorge, Jesus, and Alejandro for being such incredible hosts!More

We went to Chef’s Plate on our first night at the Hilton and came back every night afterwards. The food was absolutely incredible. The service was impeccable. We never felt rushed or bothered and every time we dined there, it was seamless. Special shout out...to Omar, Jesus, Jorge and Kevin! You all are top notch. Dining at Chef’s plate each night was the highlight of our trip! They did a great job with Covid protocols with tables spaced out and staff were wearing wearing masks at all times. PS There is a dress code and men must wear long pants and close toed shoes.More

Excellence in all aspects! Jorge, Jesus, Omar and Jesus all provided top notch service. We eat as many nights as we can at the Chefs Plate as it is just a phenomenal experience. It keeps us coming back year after year to the Hilton Playa...as this restaurant sets the resort apart from other places.More

We had three dinners at the Chef’ Plate, two with friends and one for our 15th anniversary. Each meal had a special touch, with a great gourmet flair. You could always see Diego and Kevin making sure that everybody was being taken care of. Jesus,...Jorge and Omar couldn’t be nicer and on top at all times. My husband has a wine and gourmet food palette, always being very satisfied with all dishes experienced over the yearsMore

My wife and I have visited “The Royal” 5 times now. As the Hilton, it’s great that chef’s plate still delivers with excellent menus and wonderful service, as it’s always had. Chef Mariana Hernandez and the staff provide you with a wonderful tasting experience and...Jesus and other servers with friendly and memorable service. My wife must have gluten free, and they easily and happily accommodated. We enjoyed coming 3 out of our 6 nights stay. We highly recommend visiting Chefs Plate!More

We tried the Chef's Plate as we had a coupon for a savings. The meal was very good and the service was excellent. We ate here on a Tuesday evening so the menu was the seared tuna. Everything was plated in a fancy manner. Typical...of these type specialty restaurants the amount of food was on the small side but we had many courses so we did get enough to eat. Everything was well done. Unfortunately we found all the restaurants at Hilton Playa del Carmen to be great so although the Chef's Plate to be a great choice if you want to save a little money every restaurant offered a great dinner.More

It was our first time back in two years(thanks to Covid). The Chef’s plate didn’t disappoint. The filet was one of our top all time steaks, as it was cooked and seasoned superbly. We loved the roasted cauliflower soup and the crustini bread. We were...as big of fans of the watermelon appetizer, but it was great to try new things. Our service was impeccable. Marco is one of our favorite waiters ever. We have booked dinner there several times this trip and hope we will get to have Marco as our server again. Chef’s Plate is a “must” if you are at the Royal.More

Great experience here. Jesus was very attentive and great explaining the meals. They also worked well with my food allergies. The short rib was some of the best meat I've ever had as well.

OUTSTANDING! It is a 7 course meal w/ already pre planned but for the main course they will offer a choice. The lobster, shrimp and scallops were amazing, definitely recommend. Have to have reservations due to social distancing.

Omar Guzman, Jesus Sanchez and Leonardo took such good care of us. Very attentive... the right amount of table visits. The food was amazing and goodness, the bread service. If you have a chance to enjoy the filet with rosemary sauce, do it.
