hey all - I hope you will forgive some newbie questions all compiled into one post. I have searched a bit on the web, but haven't quite found the correct answers easily.
Background: my wife is Catholic, although not so devoted/active, however I have a fascination with religion and have just recently found myself wanting to know a bit more. both of my parents families have had solid protestant background, with my grandfather being a uniting church (an offshoot of Anglican church in Australia) minister, and my uncle being an Anglican priest.
apologies for the unrelated nature of the questions (and if my questions are based on false assumptions):

What is the Catechism and which one do I read? e.g. I searched on Amazon and found the Catechism of the council of Trent as an example, is there a definitive version or something?

It looks like there is a standard Catholic Rosary (e.g. with the 5 decades etc) but there are also different types, for example the Franciscan’s tend to use a standard wooden cross rather than a crucifix with the body on it. where can I find out more about the different types of rosaries and/or as a larger question: how do I find the different quirks/eccentricities of each order or localisation of Catholicism.

I ask about Rosaries specifically because my wife is wanting to put her children through Confirmation/Eucharist etc. (sorry I don't know the order of things) and I thought that making a customised rosary would be a good activity for them, and I have a minor hobby of knotting paracord.. is this appropriate? if I were to gift hand made a rosary to my wife, what things should I consider other than aesthetic appeal?

The society of Jesus and its history fascinates me, I am about to start reading Ignatius of Loyola's spiritual exercises, but would anyone suggest a good book(s) to read about this (or youtube documentaries or anything really).

Apologies for this question if it offends: What's with the fascination with/focus on symbols/objects/tokens/statues/alters? being brought up protestant, seeing all of this in certain devout Catholic’s houses brings the word "idolatry" in my head. I understand you don't worship the statues/images/tokens etc, but there's definitely a focus here that doesn't come naturally to me.

Finally: how do I find someone to chat to, to ask more questions? I don’t want to bother the local priest specifically (I’m sure he has a congregation to run). Perhaps I should just ask the priest to recommend someone who likes chatting over coffee or something?
