- Nicole2 contributionsThis was the best cooking class I’ve taken, and I’ve taken a ton. Very authentic and a wonderful teacher. We made pad Thai and it was delicious. Sunshine walked us through every step and sent us the exact ingredients to get. It’s an amazing deal and we’ve already booked 2 more classes!! Cat takes you through the entire process and makes it very understandable. We learned about the starter, proofing, shaping, scoring, baking and then eating a giant feast at the end of the class! - Susan KGaithersburg, MD1 contributionMy husband and I took a private cooking class with Chef Joe and had a blast! If you love to cook, or simply want to learn how to cook, you cannot go wrong here. We learned a lot of new techniques in food prep, as well as how to prepare 4 new chicken dishes that were amazing (our request for this lesson since we cook a lot of chicken). Chef Joe’s personality and knowledge takes you on a journey you will never forget! We give all 10s for learning, taste, quality of ingredients, unique ideas, fun culinary factoids, and an amazing afternoon you will remember for a long time. - Mark OFresno8 contributionsCat Shimizu is an amazing teacher and baker. She is very charismatic and passionate in her class, and you can tell that she is a true expert that loves what she does.
The class is taught in the back of La Victoria bakery in the Mission, which is very cool since I have gone there several times for their macaroons and other sweets.
I was hoping to be able to work with the bread more, but given the amount of time, it makes sense that we can only do so much. We were able to finish the course by eating our own sourdough "flatbread" (cooks faster than a traditional loaf, makes sense in the 2 hour timeframe) with fresh arugula, parmesan, and olive oil, which was nice.
Overall I recommend it to those who are particularly interested in baking sourdough, or would like an introduction to baking bread. Weekend workshop classes are now open to the public and some weekdays to either learn how to cook, bake, or hone in your skills. I am an avid cook and baker, I think about being in my kitchen 24/7, I was raised on Julia Child and had the opportunity to meet her more than once. My husband and I are true foodies and will travel just to enjoy a very nice meal.
I started going to Le Cordon Blue (AKA Bleu Ribbon Kitchen) from an offer on Travel Zoo back in March of 2015. I started with a Techniques Class: Sauces, and have been hopelessly hooked ever since. I have now completed the entire Italian Series, some of the French Series and signed up for Pies, Gluten Free Baking, Thanks Giving workshop and Holiday Cookies and have started dragging along my mom and daughter. Each class I leave has me thinking of the next one I am going to take.
Now onto “The Chef’s” what can I say, each one is amazing, each one has their own technique and each is a well of knowledge that I try and absorb as much information as I can with each class. They are all so helpful and are always accommodating sharing their own expertise in cuisine. At the end of each 6-hour class, we have completed the days recipe’s that we can either sit down and enjoy on site or take home, along with the apron given to us at the beginning of class. The student chefs are awesome – they are there to get anything we need and keep the kitchen nice and clean, the amount of pots and pans they clean in a day is simply amazing and I always feel guilty dumping all my dirty dishes on them several times during the course of the class, but they happily accept with a smile. I cannot imagine not having a future workshop on my calendar. I had to plan a teambuilding event and found Civic Kitchen through a google search for cooking schools in the city. From the start, Chris was super responsive and helpful. He worked with me to design a fun and unique evening that met several dietary restrictions for 10 people, yet was super hands on, delicious, and unforgettable. We went with the Japanese Nabe dinner w a knife skills class, resulting in 3 different Nabes to share paired w delicious wine and Sake...and finished by the most incredible fudge we have ever tasted. Chris and Jen were gracious hosts and Jen was super hands on to demonstrate the art of knife handling and terrific insights about how to prep our food. Greg, our chef, was incredibly knowledgeable about Japanese cuisine and walked us thru each step of our food prep, tabletop cooking, and 2 course experience as our initial broth became the vessel for our feast and ultimately the best hearty rice and egg soups we could imagine. They even packaged up some of the leftovers for us to take home and enjoy. These folks have only been open for a year but are pros in hospitality and culinary mastery. Oh and the space is beautiful...well designed, modern, warm, and intimate. I'm already looking at classes for my husband and I to take. Highly recommend. - arcticgardenerSan Francisco, CA17 contributionsMy wife and I attended the ramen making class on January 13th. The class was structured into easily accomplished pieces. No experience was required. Everyone was successful. At the end, we cooked our freshly made ramen. The instructors provided the broth and other ingredients. A separate class is offered to learn to make the broth. Making the broth takes more time so it is a longer class. Our ramen class was about two hours. He was very engaging and easy to talk with. We loved the spots he took us to - the tea shop was my personal favorite!
