Really hard to plan someone else's holiday for them, especially not knowing you or your family or what interests you have. I would suggest browsing through the Discover Hong Kong website for starters to see what is available to do/see/taste here in HK. They have some trip planning resources and lots of good information there. Then put your own itinerary together so that you know that you are choosing places that are interesting to you and your family.
Do feel free to post your itinerary and thoughts you have along with related questions if you are unsure how something works in HK and the forum members here will gladly chime in to let you know their thoughts.

I’m thinking of Disney/Ocean Park as recommended, Victoria Peak by the new tram and the cable car to the Big Buddha, in addition to some good shopping and dining, and the daily night symphony.

Disneyland (1 day), Ocean Park (1 day), Victoria Peak Tram - (1 hour), Ngong Ping 360 Cable Car and Big Buddha (1/2 day), Symphony of Lights show (15 min), shopping (1/2 day) - Sounds like you are putting together something like a 3-4 day trip.

Somewhere near an MTR Station so that you can hop on and travel travel around the city to your sightseeing destinations

For more ideas, search for "itinerary" on this site. Of course most posts are by now 3+ years old but many things haven't changed much.
Also do use a map (such as Google Maps) to get an idea of geographic location of the sites you want to visit. That also helps a lot in planning what to do when and in which order.
