There are 2 sides to Dragsholm, its either a top gourmet restaurant with an fairly good hotel attached or the opposite. sadly the hotel don't live op to the standard of the restaurant.
the restaurant focuses on herbs and vegs. there are fairly little meat in the menu but its not something that is missed even though im a bit of a meat freak. there are a lot of umami in the dishes and that gives a good filling feeling and some exciting taste combos.
the hotel/castle surroundings are somewhat run down and clinch with the sublime restaurant. there are a lot of peeling plaster outdoors and cobwebs that could easily be brushed up at low expense.
the rooms. we were staying in a room in one of the outbuildings. The room was nice, spa, nice shower, large bed. the bed were antique but hard to sleep on, the spa were noisy when the bubbles/jets were running. it seem sad to me because they clearly went through a lot of work to make the rooms nice and welcoming, but skimped on the expenses to a nice mattress and the spa.
if you come here you have to experience the tour of the castle. the guide is brilliant, both a great entertainer and extremely knowledgeable about both danish history and the local and castle history. five clear stars for Niels Ewald
in short its one of the best restaurant experiences i have ever had, both service and feed but the accommodation fall short, my review therefore are concentrated on the restaurant and the score are solely for the restaurant and the tour

Very nice. Food is great and view is stunning. Take a stroll in the gardens before dinner/lunch. The service was magnificent.
