After 30 hours of gameplay, I still haven't figured out MC:LA handling model.

Yep, im losing all my will to play this game because of that. Since the start of my gameplay, i noticed that the cars got a pretty annoying tendence to lose the rear, on slower cars it was bearable, so I just kept playing. Until I got to the faster cars and it just got undriveable, so I looked for solutions and discovered that the tire width affects on how the cars handle, I immediately looked for a guide, applied the tire width configurations, and went racing... It didn't change shit, the car kept sliding with the slight touch in the analog, while the AI cars could do that same corner full throtlle without a single problem, and no, it's not that im being agressive with the steering. Anyways, i lost my will to play this game, and decided to write this post to see if you guys can help in any way. Any help/advice is appreciated.

Right, especially cars parked alongside roads

Yep that's also a problem.

Change your steering sensitivity in the options. I had to turn mine way down because even on zero, it was too twitchy and didn’t have a linear feel.

Just accept that's the handling model and get used to how it works. That's all I can say really. Got to make use of it.

Kind of like NFS 2015 where the handling was really weird and has quirks, but it was still a blast to play imo once you understood how it all worked.

Changing the steering setting could work but also driving technique. Like if you are hitting the sharp turns you have to tap the brake to slow down then turn and hit the gas. Or let off the gas before you drift and hit it when you are in the middle of the turn. Tapping the gas to get out of a drift helps as well, if you are about to spin out

Dont forget some ai can skip checkpoints

Well, i didn't know that. How does that happen thought? Is there a condition for this to happen or they just cut the corners when im not looking?

They sometimes take faster routes that you cant take cause youll miss a checkpoint
