I had to look up jollof rice. Adding it to my ‘to be cooked’ file now! Thanks for the inspiration!

Yesssss love me some jollof rice! I think whether you go Nigerian, Senegal or Ghana it’ll all be delicious. Enjoy!

The recipe I found was Nigerian. Now I’ll have to look for the variations from Senegal and Ghana!

Try this but I don’t use coconut oil or milk. Substitute broth of the meat you use (chicken for example). https://www.tiktok.com/t/ZTLVE7hA5/

Thank you!

Need that jollof rice recipe STAT.

Listen! You can’t go wrong with jollof rice period. But the west African countries that are known for it all make it a little differently. I cook mine Ghanaian style but Senegal and Nigeria make good versions as well!

Slightly off topic but if you have a recipe for ground nut soup or lite soup (hard to source goat where I'm at so maybe lamb) please lmk. I've been craving those since I visited Ghana and can never get the same taste myself

And this is closest to how my mom taught me for peanut butter soup! You can soak the peanut butter in hot water if you don’t have the earthen pot.

Thanks!

Here’s a good version for lite soup. If you want a finer soup, strain the blended ingredients further. Not sure if you’re a visual learner but I feel like these help when trying to describe certain cuisines!

What do you think is the closest pepper to the African hot pepper, I usually use habanero or Serrano

Scotch bonnet pepper can be found at most international grocery stores. If you can get that, I think that would be perfect for African and Afro-Caribbean cuisine!

Never heard of Jollof Rice. Looks good though.

It’s a west African dish that has origins in Senegal but many nations make it! I make mine Ghanaian style. I hope you get to enjoy it!

As a person of color of African decent I'm ashamed to have never heard of this dish. Yes I looked it up and the ingredients make it sound delicious. I'm definitely giving it a try in my LC Dutch Oven. Thank you!!

one thing I have not made in my LC is rice cause i loveee the burnt rice at the bottom and it’s impossible to scrape in these pots! Your rice looks great!

u/BlackBulma avatar

Oh I definitely love my burnt bottom!! I had it in this batch and it was delicious ☺️ but I feel you, it can get way more burnt in stainless steel pots. #burntriceloversunite
