今日慶功去了Chef Stage 獎勵一下自己 哩間餐廳主廚Eddy Chu 曾於世界廚師大賽獲第3名 及在多間酒店做過總廚 真係要慕名而來, 如果在港島區既酒店品嚐應該會好貴 好彩佢開了studio, 在尖沙咀區, 落地玻璃仲見到夜景 可以3位數就食到一個dinner set, 件事有D 夢幻 Open Oyster –南非生蠔 先來一盤南非生蠔, 中間的香草檸檬汁是主廚自家研製 蠔身味道比較清新, 海水味較淡, 而肉質肥大飽滿, 含大量礦物質! 餘韻甘甜, 配白酒很相襯 橡果級黑毛豬肉 - $498 Grilled Iberico Bellota Pork 這道菜我很impressed. 要先講講伴菜! 那菠蘿本來已經超甜, 加了巴西葉一起吃, 可以提味, 想菠蘿的食法有點似 cocktail 的mojito On side 的紫薯同樣出色, 十分甜, 打成蓉吃, 忍不住一口一口的吃下去而不覺得油, 而其他的伴菜都採用烤焗, 保留了水份同營養, 很是健康 而主角 - 橡果級黑毛豬肉 真的大讚, 是西班牙高級黑毛豬! 因為用橡果餵飼,肉質較結實, 切下去油脂分佈均勻, 肉味香濃使其油脂豐潤卻不膩口! 配埋菠蘿一起吃, 仲有提味昇華的效果 , 回味甘香 燒牛脷配扒大蝦肉汁 - $498 X-tongue with King Prawn & Crab Sauce 鹹牛脷用蔬菜煮完再輕煎, 外脆內嫩, 肉質嫩而易咬開, 油脂含量豐富, 而且份量很多, 有整整2 大塊 加上香煎超大虎蝦, 虎蝦食材不用懷疑, 當然很新鮮, 肉質鮮嫩 , 加上蟹肉汁淋上面, 令人垂涎三尺 , 很回味 乳酪鮮蝦芒果沙律 乳酪是自家製既, 不會酸, 反而有點果香及清甜, 配新鮮的沙律很開胃 清酒蟹肉日本年糕 清酒蟹肉加忌廉汁煮年糕真的第一次食, 未上枱已經聞到清酒忌廉的味道 蟹肉含量很多, 每一口跟年糕一起吃, 層次好豐富, 彈牙又有啖啖蟹肉伴隨 冬蔭公湯 (是日餐湯) 材料很豐富, 有大蒜, 薯蓉, 蟹肉的湯及香茅, 而啖啖蟹肉好好味 這個fusion 湯很讚, 飲下去不會太辣, 但飲了一回辣味才會感受到, 味道很特別 黑松露蘑菇忌廉湯 因為蘑菇blend 得好醉, 有粒粒的口感, 加埋黑松露食是絕配 , 比坊間的出色 是日甜品 檸檬芝士蛋糕及意大利芝士蛋糕 主廚好像會預視到我們太飽….份量真的剛好 一口一cake! 凍食的檸檬蛋糕完全不酸, 濃濃的果香在口中化開 比Tiramisu 更出色!

因為疫情關係,已很久沒有約閨蜜外出食飯,今晚一於帶她來試試這間由星級廚師Eddy Chu主理及有超級靚景的扒房! 餐廳主要分兩區,一邊是無敵海景,另一邊是開揚樓景。海景更可享受日落景色,份外浪漫! Five Course Set Dinner 選擇豐富, 款款不同價錢;還可另加$288 Seafood Platter 海鮮盤。 乳酪鮮蝦芒果沙律Prwan of Mango Salad ,有機沙律菜及大蝦新鮮味美, 酸酸的乳酪配上甜甜的芒果令人食慾大增! 黑松露蘑菇湯Mushrooms & Black Truffle ~細碎蘑菇粒令口感豐富,輕盈幼滑的黑松露味道令人難忘! Soup of the day 是蕃茄薯仔湯~蕃茄香氣撲鼻,啖啖新鮮蕃茄蓉及薯仔粒,味道超 fresh!! Surprised!!! 每位客人都有一件Complimentary黑椒雞翼,雖然是免費的,但賣相精美,皮香肉嫩,黑椒惹味非常 ! 第三道菜是清酒蟹肉年糕,醬汁非常creamy,年糕軟綿綿,吸收了醬汁精華軟腍入味! 主菜出場~ 慢燒美國牛肉眼US Beef Rib Eye ,300g的肉眼扒以慢火燴煮而成(Medium done) ,把肉汁完美鎖起,肉香四溢,油脂均勻,牛味濃郁,讓人齒頰留香! 另一道主菜是鮮鱸魚柳配日本帶子Pan-Fried Fillet of Seabass with Sea Scallop,鱸魚肉滑溜又鮮甜,魚皮香煎後份外香口微脆。日本帶子鮮嫩,入口滑溜。 值得一讚是配菜也一絲不苟,有香煎蕃茄及甜蕃薯蓉,同樣味美。 最後當然是甜品,小巧精緻,兩種口味,芒果及朱古力同樣是我至愛,甜味適中,雖然已經很飽,但實在令人難以抗拒呢! 一邊享受無敵開揚景色,一邊享受星級美食,加上侍應親切殷勤的服務,令我們享受了一頓非凡晚餐!

I am not quite sure what to make of this restaurant but the head Chef Eddy Chu is an aspiring restaurant consultant, who has been a consultant for one of the French restaurants I have been to. The menu here is interesting, it is not purely Western food because the Chef hopes to cater for locals which is why they have items like the crispy bun (ju jai bao) and roti with curry sauce that is out of the blue! After trying the food I felt that Chef Chu has succeeded in catering for local tastes because locals tend to go for creamy and sweet dishes!

在openrice search 尖沙咀有咩食嘅時候, 總會見到「CHEF STAGE de Eddy Chu」呢間西餐廳私房菜名列前茅,好評甚多, 所以今次就帶小妹黎撐枱腳~☺️ 餐廳擺滿不少嘅獎項和相關報章雜誌報導, 原來老闆 Eddy曾於多間五星級酒店和會所擔任總廚, 擅長炮製多國菜、fusion 菜, 唔怪得呢到咁受歡迎啦! 餐廳大部分嘅座位用餐時可以見到維多利亞港嘅景色, 所以有好多人都會揀黎呢到慶祝紀念日或生日~ 我地當日見到十枱有八枱都係。😂 除咗a la carte單點之外, 仲有套餐供應, 5 course set dinner 五道菜套餐由$468起, 精選二人晚餐$1488。 我地叫左一個5 course set,之後就散叫其他。 店員知道我地share食, 仲主動幫我地將餐湯和小食分兩份,幾貼心!☺️ 乳酪鮮蝦芒果沙律 沙律菜配上鮮蝦、芒果、車厘茄、粟米粒,加上乳酪,酸甜開胃~ 黑松露蘑菇湯 好多蘑菇粒,口感豐富,仲帶有啖啖嘅松露香~ 清酒蟹肉日本年糕 年糕沾滿用清酒、蟹肉、忌廉煮成嘅自家製醬汁,入口creamy,不錯吃! Slow Cooked US Beef Rib Eye 慢燒美國牛肉眼($578) 因為係慢燒嘅關係,本身已經係五成熟, 所以唔洗再揀熟成度架啦!😜 牛扒有2cm厚,肉質粉嫩, 因為慢煮嘅關係,肉汁鎖住晒係裏面, 腍滑鬆化,肉香味美, 平時食肉眼少不免會遇到肥膏或筋位, 但原來筋位慢煮之後口感軟腍得黎,仲會愈嚼愈香~🌟推薦❗️ 套餐可以加$288升級享受seafood platter 海鮮盤(原價$498),幾抵喎! 有生蠔、鮑魚、日本鮮帶子、鮮蝦和鮮蜆, 配上店家自家製嘅醬汁,味道更上一層樓! 紐西蘭生蠔肥美爽甜,配上檸檬香草汁,少少辣,鮮味更突出~ 磯燒鮑魚軟腍入味, 日本鮮帶子配上冬蔭功沙律醬, 好似食緊泰國菜咁,味道幾新穎有趣! 大蝦和大蜆蘸咩醬汁都好夾~🌟推薦❗️  呢到嘅cocktail都幾平,$48起, 不過款式唔多,味道還可以吧! Tequila Sunrise($48) 見到隔離食意粉有原板海膽咁正!😍😍 所以我地就跟風~😂 原板鮮海膽配紐西蘭蟶子意粉($228) 是日為韓國海膽,有足足兩板咁多,未食已經流晒口水~☺️ 海膽味道甘甜, 淨食得,拌意粉食都得! 白汁扁意粉有好多配料, 蟶子爽彈,仲有蘑菇、車厘茄和蟹籽。🌟推薦❗️ 最後是日甜品為一口芝士蛋糕配朱古力慕絲, 不過份量就比較細。 整體來說, 食物質素和價錢都符合性價比, 有景,食物又不錯吃,確實係慶祝紀念日嘅好選擇!😏

Great value, they have ribeye, duck leg, sea bass, average price $160. Includes soup, salad, dessert and drink. Pay cash for lunch and they remove 10% service charge. Will return. Good job Eddy

Good atmosphere, nice environment, certainly a gd place for couples to dine in. I have visited this place a few times and i particularly liked their mushroom soup and their prawn toast!

We went for lunch and the place was quite crowded (luckily we had made a reservation) even though the price was quite high comparing to nearby restaurants. But later on, we found that the set lunch was in fact very value for money as it included soup, salad, bread, main course, dessert and coffee. We took the mixed grill with a big prawn, fish fillet, beef ribeye and iberico pork. It was so delicious and the ingredients are all very high quality and fresh ingredients. Really a good place to go! :) But be aware that it is more like the Hong Kong style of western dishes (you can see some wordings in the front entrance saying that it is a 西餐大排檔, a very good description). However, it's surely very delicious.

We are a group of 5 and came here for a dinner. Not so much enjoyed as the tables were cramped, choices limited from menu although food was ok. There was a singer singing next to us and we found a bit hard for chatting. Bill was on steep side. We find no attraction to go again.

久聞大名、終有機會親臨一試大廚手勢。位於亞士厘道19號19樓,地理位置佔優,相信日間景觀不錯。餐廳分左右翼、地方不算大、座位雖則有點狹窄,不過始終食物質素較重要。 Fruit Tea Cooler $58 加入切得細細的水果粒,用飲管輕易吃到水果,很方便。不過櫻桃味道就未必每個人都喜歡。 Mystery Mocktail $58 這個有點像Sparkling Cocktail, 配新鮮水果粒味道微甜夠fresh! Tuna Salad $148 吞拿魚粒外面煎香、裡面半熟,與羅馬生菜、車厘茄、大菇一起吃、配搭新鮮。 Whole Mushroom 松露煮法國原粒磨菇$98 一向愛好菇菌類的我、以前在荷蘭住經常會買磨菇、大啡菇自己煮。原來法國進口的磨菇更大隻、差不多有我的手掌般大、加入松露醬汁很rich很juicy! 廚師巧妙地加入了辣肉腸、咸咸的配忌廉汁磨菇、提昇了味道層次感。 Fish bouillabaisse 法式明爐鮮魚$388 泰次明爐魚吃得多,這個法式明爐沙班魚就第一次食。先嘗一口魚湯,鮮甜無比。有原條沙斑魚、魚肉結實而嫩滑、冇咩骨啱晒我。鍋裡仲有鮑魚、帶子,鮮蝦、鮮蜆、全部都新鮮美味! Pork Rib Meat 西班牙黑毛豬肋肉條 $178 黑毛豬肋條比較濃味、所以侍者提議先吃菠蘿粒一清味蕾以消膩感。豬肋條比較煙靱有咬口、伴菜的薯蓉則是用芋泥制成、幾特別。 全晚最喜歡的是那法式鮮魚鍋、楺合了泰、西式的精粹,是一道出色的fusion菜。另外欣賞廚師對於食材的執著、創新的菜式配搭以及鑽研味道的相容匹配性。
