ABOUT OUR PASTRY CHEF: MARTIAL RIBREAU
After graduating from the Jean Ferrandi Culinary School in Paris, France, Martial worked for over ten years in bakeries along the Champs Elysées. Bringing his varied knowledge of fine pastries, Viennoise and artisanal breads to Toronto, Martial developed unique pastry and bread recipes for bakeries around the city, including Le Comptoir de Celestin and Petite
Thuet. For more than five years, Martial enjoyed passing on his skills and passion to students in traditional bread and pastry courses, at George Brown College. He also co-developed the Post-Graduate Advanced French Pastry program, at George Brown College. Today, Martial has combined a passion for recipe development with a vigorous production facility.

We tried making the
Viral Flat Croissant 🥳
After receiving quite a few messages
from friends and clients, we realized the fun in "just experimenting" (as Chef would say).
We both thought it was not going to taste good, however, we were completely wrong! The flavours of the Croissant dough are still very present, and the condensed layers also remain crunchy and melt-your-mouth. If you are a fan of the Kouign-Amann, you would probably enjoy this Flat Croissant due to the taste caramelization.
We'll have the Flat Croissant (garnished in chocolate) this Saturday & Sunday!

The Garda School is especially grateful for the support of the many Canadian College Italy (CCI) students and who travelled all the way from their campus in Lanciano for the occasion.
“Nearly thirty years ago, my family moved back to Italy from Canada to create a school based on the philosophy that incredible growth and transformation is achieved just outside one’s comfort zone,” said Mr. Davide D’Alessandro, Director of The Garda School and Canadian College Italy.
“I feel incredibly privileged to be carrying that torch today and lighting a new fire of transformative education with my family.
We will cut the ribbon here today on behalf of my mother, Marisa DiCarlo D’Alessandro, CCI’s founder, who could not be here with us today.”
