Both have a lot to see but with an early start and late finish it could work. Decide your must-sees and have a plan. Be prepared for quite a bit of walking, especially in Elvas.
It will take around 75 minutes to drive to Évora. Check parking areas before you set off. There is not much inside the city walls.

perhaps i am a slow traveller and i guess we all have our own pace of travel but i would pick one over the other.
Been to both places and others in between and although you could certainly drive to Evora and then drive to Elvas the same day from Lisbon I'm not certain how much fun seeing both places would be. You would have time to whip round Evora centre and maybe whip round Elvas before rushing through one of the Neapolitan forts. If you only have one day choose one place, Evora might be best.
IMO too much for a day tip from Lisbon.... My choice would be to visit Evora. Personally I think it's a much nicer town than Elvas and easier to walk around. There's quite a bit to see. Elvas is VERY hilly,steep streets and(don't know when you are travelling) in the hot weather, could be tiring. And because of the hills car parking would be even more difficult than Evora. It's easy to get lost in Elvas, but not so much in Evora.
Too much! Drop Elvas. There is so much more to see and experience in Evora. We normally stay in Evora for 3 nights, visiting some of the fabulous places nearby.
We just left Elvas today. Had 3 wonderful nights.
Definitely worth a visit, but I think an overnight would be your best bet
