If I were to try that, every plant would know where I am and annihilate my hp. And then I would be mid-air chomped.

Spamming the fire button with spray attacks make them have a faster rate of fire. (Except Torchwood's spray because that's an ability.) Also they can be fired for longer like that because it cools down a little between each attack.
Most of them get +10% fire rate but, Roadie Z gets +24% for some reason.
Base engineer health is 125 because but, Roadie Z has 150 plus an additional 10 from health upgrade resulting in 160 health. Bade Roadie Z DPS is 90, this got increased to 111 by damage upgrades and got an additional boost by tapping it resulting in 138 DPS.
Your fire rate numbers are extremely wrong, but yes, mashing the button gives you a massive amount of extra damage(and max mashing is what the stat site uses for DPS). Typically, sprays have 240 ROF(4 ticks a second), but mashing can get you to a max of 600 ROF(10 ticks a second). Without mashing, Roadie's dps is only like 44 with both upgrades lmfao
Sorry I got those DPS numbers from the wiki and the fire rate boost numbers were tested in the backyard (on crazy) with my friends, years ago. Now that you mention it, back when I made those experiments I believed that fire damage has four ticks (I tested that out by myself).
