Check out Matt Malone as well. He’s the most popular iRacing streamer on Twitch but also posts several races a week on YouTube.
Nicki Thiim (English), Matt Malone (English) and Heikki360 (Spanish) are the ones that I follow.
Nicki Thiim is also a real racecar driver (WEC Champion), so that's a plus.
Don't insult Nicki by stating he's English... He's a Danish viking! 8)

Gamermuscle - funny, doesn't take himself seriously at all and some good reviews etc.

Jimmy Broadbent and Matt Orr aka Empty Box are the best.
I recently discovered RealRadman after racing with him in iRacing and really enjoy his videos. He's not extremely popular, but very good.

YT- SimRacing604 & Billy Strange. Not quite as 'entertaining' as some of the others mentioned, but I find their content to be informative. Billy has real world experience.

Jimmy Broadbent is fantastic. He regularly uploads really fun and interesting videos, and frequently streams online races (streaming on YouTube rather than Twitch).
Hobbo88 is great for V8 Supercars And a bit of dirt as well. Nothing but racing. No reviews or anything else just pure racibgZ
Empty Box, Jimmy Broadbent, Jadier, The Extra Mile, Nicki Thiim, random callsign, and GamerMuscle are the ones I follow on YouTube.
FailRace does some sim, and by far my favorite racing YouTuber. I occasionally watch Empty Box who usually plays iRacing.

Depends what you want. In my travels it seems a LOT of sim YouTubers are mediocre drivers who just fuck around and spout memes.
The two best all-around sim racing YouTubers are Billy Strange & Nicki Thiim. Both have real world experience (Strange is a sportsman sprint car driver, Thiim a WEC GTE champion), both are exceptionally fast/clean sim racers, both often go into the differences between sim & real world. You will actually learn something from watching them.
Runner ups in this category are Random Callsign, Jardier, & Georg Ortner (6e66o). While not real-world drivers they are all still very fast, competent sim racers.
In terms of "comfy streams" that you can turn on and converse with the host directly, your choices are GamerMuscle, Jeff Favignano, Empty Box (Matt Orr), SimRacingPaddock (Will Marsh), The Simpit (Shaun Cole) and Jimmy Broadbent. Their channels are more intended as sim racing "variety shows" so don't expect the best driving abilities or accurate reviews.
Now we get to the miscellaneous section. FailRace is unique in that he uses racing games to create pure chaos and his videos are always worth a watch. SlapTrain is the biggest racing game personality period but the guy cannot drive to save his life and most videos are just him trying to drift (poorly) in whatever game he's been given a key to that week. Lastly is Jason Jacoby; this is a 28 year old who has deluded himself into thinking he's a real NASCAR driver complete with a rig that costs more than most real cars & firesuits + racing shoes for each online race - worth watching a few times just to see that weird side of the community.
