How about "This is a cliffhanger book."?

I learned some expressions like "I am a dog/cat person.". So I wonder how about describing a book full of cliffhangers as "This is a cliffhanger book.".

You could colloquially say "This is a cliffhanger-y book", but otherwise, just use "This is a book with a lot of cliffhangers". The other example you gave is a special case, meaning it only works for "I am a _ person".
