Originally I played sands of time in 2013 and really loved it, but completely forgot about the game and only recently I’ve rediscovered it, so I thought why not binge them in order?
I will start from
Sands of time, Warrior within, Two thrones, 2008, Forgotten sands.
I’m just wondering if there’s any advice or anything important I should know before going into the games or if there are other prince of Persia games I should play and if my order is correct.

There are different versions of forgotten sands with varying quality based on what console the game is on
Yeah, the Wii & PSP versions are fun.
So what’s the general consensus on the best platform for enjoyability?
It's not about enjoyability.
Each platform literally has a different game and story under the same title.
The PS3 one is about the prince and his brother unleashing a great evil while trying to conquer a city, the Wii one is about the prince finding a genie and trying to free a lost kingdom, etc.

Your order is correct, however, take into count that The Forgotten Sands has many different versions:
PS3/Xbox360/PC version
Wii version. A different story for the prince, BUT gameplay and level design that is similar to the sands of time trilogy.
PSP version. 2D game that feels more like the original games.
DS version. 2D as well, but this one actually takes place AFTER the end of the two thrones, apparently the prince has amnesia.
Also, technically Prince of Persia 2008 has a sequel called the Fallen King for the Nintendo DS.
After finish them all, play The Lost Crown, and then The Rogue Prince of Persia.

And are some of the forgotten sands games canon while others aren’t?
I would say that you enjoy the time of the sands of time , warrior within and two thrones first.
Then you can move on to other games like all the different versions of forgotten sands and the old prince of persia games.
PS : in the lore the forgotten sands come before warrior within and after sands of time. However I would advise you to play forgotten sands after two thrones.
If you want “all the games,” why not the original trilogy? Or the ones that release/released this year?
warrior within is my personal fav of all the games tbh.. make sure you get all the health upgrades so you can get the true ending that Two thrones starts with !

Start with PoP 3D, you would miss a Great game. After the forgotten sands play the lost crown!
I also have love for 3d but we should be honest, its not a great game. Especially considering what else was available at the time (tomb raider 1-4)
