Back to Butter: A Traditional Foods Cookbook - Nourishing Recipes Inspired by Our Ancestors Paperback – March 1, 2014
Purchase options and add-ons
Welcome (Back) to Traditional Foods!
What if butter and other “banished” foods like eggs, cream, and bacon had the inherent potential to restore our health and well-being—and that of future generations? It’s a pretty good question, isn’t it?
Traditional foods are the real, whole, unprocessed ingredients of our ancestors’ kitchens. These simple foods nourished us for centuries, before modern food processing turned our health upside down. Their value is once again gaining recognition.
Traditional foods include:
Grass-fed Meats and Wild-caught Seafood
Organic, Farm Fresh Produce
Pastured, Whole, and Raw Dairy
Healthy Saturated Fats and Unrefined Oils
Soaked and/or Sprouted Grains, Nuts, Seeds, and Beans
Fermented Vegetables and Cultured Condiments
Unrefined Sweeteners
Back to Butter explores these topics and more. Beautifully photographed and divided into two parts, Part I teaches you how to stock a traditional foods pantry and offers step-by-step guidance on the techniques and preparation methods practiced in traditional foods—including sprouting, soaking, and fermenting. Part II showcases more than 75 mouthwatering recipes, from main meals to side dishes, desserts, and more, including:
Cultured Cream Cheese Olive Dip
Red Rice Salad with Cumin Dressing
Millet Salmon Cakes with Creamy Dipping Sauce
Meatballs and Mushroom Gravy
Caramelized Beets with Fresh Chives
Fresh Corn Pudding
Red Cabbage Kraut with Fresh Dill
Sourdough Bread Pudding with Raisin
Crispy Peach Cobbler
Learn just how nourishing and delicious it can be to revisit the wisdom of our ancestors and return Back to Butter.

Review
"I love to cook. And I love fresh, natural ingredients???no processed foods on my table! Finally, a wonderful, beautiful cookbook that helps me put it all together to better understand ingredients and gives me glorious recipes to in which to use them." - Ruth Graham, Christian author and speaker
"In Back to Butter, authors Molly and Sandy deliver a candid and heartfelt approach to addressing some fundamental questions: What is real food and how should it be prepared? And what are the advantages of nourishing oneself in this manner? The recipes and advice are carefully thought out to reflect the wisdom of our ancestors, with the book's photography further accentuating these important words. This book is a labor of love, both in writing and in living a lifestyle." - Raymond Silkman, D.D.S.
"If there's one thing I wish all my patients knew, it's that healthy eating is one of the most critical, basic things we can do to promote good health, offering both immediate and long-term health benefits. Back to Butter is a rich resource in this regard, packed with wonderful, mouthwatering recipes, beautiful photographs, and pure, unadulterated nourishment." - Greg Merti, M.D.
"I've often wondered how we went so far astray with the simple act of feeding ourselves. Unearthing the path to finding our way back to simple nourishment is like hacking through a forest of odd diets, claims, and products. Back to Butter cuts through the clutter to present a road to sane eating rooted in traditional diets." - Evan Kleiman, chef, author, and radio host of L.A.'s "Good Food"
"Back to Butter takes us back to school on what we need to know to begin to restore the health of our families. With wisdom, compassion, and expertise, Molly and Sandy inspire us, helping us to navigate the changing landscape of food and health. Keep this book tucked away in your kitchen so you can turn to it, like a good friend, for insight, inspiration, and information." - Robyn O'Brien, author of The Unhealthy Truth and founder of the AllergyKids Foundation
"I like that the book starts with a detailed look at what a traditional foods diet means and why it makes sense. The first several chapters also delve into the practicalities of a traditional food diet: stocking your pantry, evaluating ingredients at the store, and basic techniques like making buttermilk and cooking quinoa that serve as foundations for the recipes that follow." - TheKitchn.com
"It used to be that every great cook knew the importance of using butter and other traditional ingredients. For nearly half a century, however, this was lost. Back to Butter is like a sigh of relief?"an old friend has finally returned home." - Joette Calabrese, homeopath, public speaker, and author
"For those new to traditional whole foods, there is no better place to start than Back to Butter. Molly Chester and Sandy Schrecengost take the guesswork out of preparing foods key to health and healing, from kefir to pté. Even those long familiar with the principles of traditional cooking will be delighted and inspired by the recipes in this beautifully illustrated volume." - Sally Fallon Morell, president of The Weston A. Price Foundation

This book is such a delight, both visually and for the tastebuds. It is worth 5 stars to me for the recipes, the photography, and the valuable tips. I also love what the authors said about food: "Even when we seem so different--politics, race, religion, and so on--we all share the need to be fed. Through food, we bridge gaps. Simple nourishment gives us a source of conversation, a way to share, and a way to learn about each other's wants and needs." In a day where so many are willing to divide and be divided into seemingly endless categories, food can be the great uniter. That is a precious thing.
I recommend this book to anyone who is into real food, the way it's been eaten for thousands of years, before we realized we needed diet gurus to strip us everything delicious. It comes down to just eating food that God made for food. The truth will always set you free--of diets too!
I will say that out of the small selection of cookbooks that I own, there are only two that are my absolute favorites, & "Back To Butter" is definitely one of them. I love the pictures, & Molly's smile emanates throughout the entire cookbook.
In reading about Molly in the cookbook, I came to find out that she overcame Polycystic Ovarian Syndrome through consuming nutrient-dense foods--something I can relate to all too well.
Being that I just received the cookbook the other day, I have not gotten to try any of the recipes yet. However, I cannot wait to start cooking her delicious, buttery goodness recipes!
I hope to visit their beautiful farm someday!
But, after making about 4-5 recipes from the book now I have to say I love this book. I've adapted some of them to fit our life a little bit (I don't reserve bacon grease and probably won't ever make my own kefir or do much in the way of fermenting) but every recipe I have made has been amazing and a hit with our whole family! Love it!
