The Cake Mix Doctor Returns!: With 160 All-New Recipes Kindle Edition

4.6 4.6 out of 5 stars 778 ratings

What could be better than a phenomenon? The return of a phenomenon. Ten years ago Anne Byrn's The Cake Mix Doctor began its extraordinary run as one of the most popular baking books of all time. Now Anne Byrn is back with the all-new Cake Mix Doctor Returns! From the beloved author who showed home bakers how adding a touch of sweet butter or a dusting of cocoa powder, a dollop of vanilla yogurt or flurry of grated lemon zest could transform the ordinary into the extraordinary. Here are 160 brand-new recipes—that’s right, 160 amazing cake mix recipes—for luscious layer cakes, sheet cakes, brownies, bars, cookies, and more.

And the book is needed more than ever. Today 90 percent of home cooks use prepackaged mixes, while the economy is creating a perfect excuse to let them eat cake—cake equals happiness. And what cakes! 40 layer cakes, from Tiramisu Cake to The Best Red Velvet Cake, Strawberry Refrigerator Cake to Chocolate Swirled Cannoli Cake. 35 sheet cakes. 38 bundt and pound cakes. 16 cupcakes and muffins, plus the cult classic Whoopie Pie. And brownies, bars, and cookies, including Spice Drop Cookies, Angel Food Macaroons, and Chocolate Espresso Biscotti. There's even a wedding cake, a frequent request from the author's passionate online community.

The Cake Mix Doctor is back—just say ahhhhh!

Editorial Reviews

From Publishers Weekly

This volume isn't about artisanal baking nor does it pretend to be. And that won't bother the legions of devoted Cake Mix Doctor fans. Byrn's sixth book goes back to what made her famous: a whole lot of recipes for comforting cakes (plus some cookies and brownies) made easy thanks to the use of purchased cake mix and other supermarket ingredients. Readers are welcomed with thumbnail color photographs of all cakes in the book, with page numbers to enable quick flipping when a confection catches the eye. A hint-filled introduction, written in Byrn's friendly, collaborational prose, offers confidence even to kitchen neophytes. And then there are the recipes, 160 of them, many contributed by fans. They include lemonade chiffon layer cake with raspberry filling, made with yellow cake mix, frozen lemonade concentrate and raspberry pie filling; double coconut macadamia cake, featuring yellow or butter cake mix and vanilla instant pudding mix; chocolate-covered cherry cake, utilizing chocolate cake mix with pudding and cherry pie filling; and plenty more appealingly straightforward sweet treats. For those who want to have their mostly homemade cake and eat it, too, this book will become a go-to guide. (Oct.)

From the Back Cover

It’s pure magic―you’ll never believe these cakes come out of a box!

Transform ordinary cake mix into extraordinary cakes through just the right additions: Use buttermilk and sour cream for greater moisture and richness. Boost flavor with cocoa powder, peppermint extract, lemon zest―even lemon yogurt. Instead of water, try orange juice, canned pumpkin, a leftover cup of coffee (it makes for a devilishly delicious brownie). Celebrating ten years since she reinvented home baking, Anne Byrn takes bakers boldly forward with 160 all-new, fast, foolproof recipes, plus dozens of fresh ideas on frosting (including how to make only what you need), garnishing, and baking lighter cakes for lighter appetites.

Great book!
This is the second in what I believe is a series of three. The recipes that I have tried have been fantastic and I'm excited to try many more. My book is already full of dog ears for the goodies I want to make. I'm very pleased with my purchase!

It's 2023 and Ms. Byrn's book was published quite a while ago. The recipes are varied and there are so many to choose from. The first recipe I tried was actually from Ms. Byrn's most recent book A New Take on Cake (Susan's Lemon Cake). I and everyone at the church's hospitality hour enjoyed the lemon bundt. I didn't know, until now, that cake mix boxes are now 15.25 ounces and not 18.25 ounces. I looked online and learned that I just need to add three ounces from a second box to stay utilize the recipe in the previously published books. I have Ms. Byrn's other baking books (American Cake, American Cookie) and I enjoy and benefit from all the explanations and background. Thank you very much.

I do a lot of baking from scratch but occasionally I need to make a fast dessert and rely on a mix. I am not a fan of store bought cake mixes; I always add different ingredients to improve the taste and texture. This book as well as the initial book, The Cake Mix Doctor, gives me many creative options to transform a mediocre cake mix into an incredible dessert!!! I even tweeked some recipes and made them even better!!! And best of all, no one can ever tell I used a pre-packaged mix!!!

I made several recipes and they were all winners(Banana Chocolate Chip Cake,Cinnamon Swirl Cake,Lemon Streusel Cake(used a confectionary glaze without cream cheese) but my absolute hands down favorite and most requested recipe is the Old Fashioned Brownies!!!! Every time I make these, I get lots of compliments and several requests for the recipe!! My husband's co-workers even beg him to bring in those "killer brownies!!"

These brownies, when prepared as the recipe states are cakey and fudgy. Personally, I prefer my brownies fudgy, not cakey. The fuggier the better!!!! I love the dense chocolate mouth feel!! I tweeked this recipe to get the fudgiest most dense chocolate brownies ever!! By reducing the number of eggs to only 2, and adding 1 1/2 TBS of Instant Espresso Powder to the batter, these brownies became the most decadent brownies I have ever eaten!! They are even better than any recipe I made from scratch!!! Be careful not to over bake them. The outer edges should test done and the middle have a slight residue on a toothpick. These will set up when cool and taste best refrigerated... OMG these are truly AMAZING!!!!

If your life is just too busy for the kind of labor-intensive perfectionism personified by Martha Stewart, then this is the book for you. It's certainly been the book for me. Long gone are my days of searching the aisles of some specialty market for that one exotic ingredient (imported yak butter!) to add the final master touch to some gourmet dessert designed to wow dinner guests. These days I and the people in my life are happy with less "ambitious" fare. And guess what?: the end product is often just as tasty as one of my snobby, elaborate "discriminating-palate" ventures of yore.

Please note, however: some stars in the "semi-homemade" firmament are all too willing to sacrifice quality in order to save a few minutes in the kitchen, but Anne Byrn's not one of them. She really does care about things like presentation, texture and flavor. Her creative tweaks can make almost any box mix taste pretty close to from-scratch originals.

Apart from ease of preparation, the sheer variety of recipes is a major reason for this book's appeal (it's a worthy successor to Byrn's original Cake Doctor volume). Layer cakes, cupcakes, bundts, brownies---they're all here, in a wide range of inventively yummy combinations and permutations. I've tried everything from Smith Island Cake to Apricot Amaretto Cake to Gooey Pecan Pie Brownies and have never been disappointed with the results.

More important, the family and friends with whom I've shared these desserts are likewise pleased and will often ask me for the recipe. That's as a reliable a thumbs-up as you can get.

I bought 2 of these cake books. My daughter in law, and my niece liked the books. However, I think the format of the book was so different from the other book, I did not like. The original cake mix book, had pictures and was easier to read.

Why love her cookbooks-- if read ingredients & it sounds good, it turns out amazing. Can be so frustrating trying a new recipe and it turns out "okay". Her recipes are wonderful & highly recommend this book. I have her old book and have made about 20 recipes from both versions. I like this updated version better -- recipes improved, more modernized ingredients -- I hope she continues to update. The next version would be great with more pictures. Even if it meant fewer recipes [aka only include the very best in the cookbook].

Some recipes made:
Snickerdoodle Cake [as cupcakes in picture w/her cinnamon buttercream frosting]
Lemon Cupcakes [as 6 inch round cake in pic w/sunflowers on it, w/her lemony buttercream frosting]
Darn Good Chocolate Cake [as 6 inch round cake in pic, blue with pink flowers, w/her buttercream frosting]

-- also made Stacy's Lighter Chocolate Cake, Cappuccino Coffee Cake, Nancy's Breakfast Cake, Houdini Bars, Peanut Butter Brownies, etc.

I love and have used Anne Byrn's Cake Mix Doctor cookbooks for at least 16 years. That is why I purchased one for my Kindle. The Kindle purchase I only give one star. In the regular books, instead of the usual table of contents, you have a picture of each cake and the page on which you will find the recipe. This is a feature I especially like about her books and it is missing in the Kindle version. This makes it almost impossible to find a recipe you'd like to try unless you have a whole lot of time to browse. I highly recommend this cookbook...I learned so much about baking cakes from Mrs. Byrn's and you will too. Just don't buy it for your Kindle.

Having only recently discovered these Cake Mix Doctor books (after having been fed the Darned Good Chocolate Cake by a relative), I went out and bought the two cake mix ones and the cupcake one. These are all wonderful books. There are some repeat but updated recipes in the Cake Mix Doctor Returns, but there are also some new recipes to try. The marvelous thing about these books is that you begin to look at a cake mix in a whole new way. It's a cake mix, but you can treat it like biscuit mix and use it for so many more different things. I've already started to create my own versions of the recipes in this book and have many ideas for more. That's the beauty of these books is that they inspire you to create your own versions. All the recipes may not be perfect or may not turn out the way you like them, but hey tweak them to your own taste. The recipes are all very easy, literally dump all the ingredients mix and bake. With very little effort, you can create something spectacular to serve your guests.

Amazing what you can do with plain boxed cake mixes. I had the pleasure of meeting Anne and she was just an incredible lady. Her recipes are easy and the finished product is always delicious.
