Chinese New Year Dinner Eve; How to Impress your In-Laws

CNY is very family oriented festivities where most Chinese will travel back to their hometown to gather and celebrate New Year with their loved ones. 

CNY Dinner eve known as  Nian Ye Fan (年夜饭). Families burn incense to worship their ancestors. Older and senior members of the family give the younger ones good luck pocket money known as Ya Sui Qian (压岁钱)

Traditionally the Lucky 8 Dishes are prepared during the Eve

  • Jiaozi (Dumplings)

  • Dayu Darou (Whole Fish or Meat)

  • Lawei (Cured Meats)

  • Chun Juan (Spring Rolls)

  • Changshou Mian (Longevity Noodles)

  • Good Fortune Fruit.

  • Babao Fan (Eight Treasures Rice)

  • Tang Yuan (Glutinous-Rice Balls in Sweet Syrup)

Recipe for Longevity Noodle

Ingredients: 

  • 1 packet of dried Egg Noodle (4 Onz) 

  • 1 Egg 

  • 1 Cup of Water 

  • 50 gram of Bean Sprout. 

  • ½ Bamboo Shoot (sliced) 

  • 1 Cloves of Minced Garlic 

  • ¼ Onion Thinly Sliced 

  • 2 Red Chilli 

  • 1 Spring Onion Sliced 

  • 1 Tsp of Ginger. 

Condiments

  • 2 Tbsp of Light Soya Sauce, 1 Tbsp of Dark Soya Sauce, 1 Tbsp of Oyster Sauce, 1 Tsbp of Sweet Soya Sauce, 1 Tsp of White Pepper, 1 Tbsp of Sesame Oil, 2 Tbsp of Rice Wine.

How to Make

  • Sliced and Chopped all the ingredients. Boil water and blanched the egg noodle. Cook until it is Al Dente and then soak in Cold Water for 1 minute. 

  • Cook the garlic, chilli, bamboo shoot, beansprout, onion, and ginger. 

  • Add 1 Tbsp of Rice Wine and simmer for 30 seconds before adding 1 cup of water. 

  • After the water residue is little, add egg and add all the condiments. Then toss noodle and mix well. 

To add floating chopsticks, cut a small carrot position upwards, then stick the chopsticks. In between the chopsticks, stick the fork and cover all with the noodle given the impression of floating fork.
