I think in this video, this is kind of an Austrailian (and UK I believe) thing. "I've gone to," is often used to mean "I went" when storytelling or narrating in videos like this. This is a specific context that it is used in where it only means "I went." I don't know anybody personally in the US that uses "I've gone to" in this context.
"I've gone to" can often be used interchangeably with "I've been to" if you're talking about places you have seen/been. So "I've gone to Japan" and "I've been to Japan" are the same, "I've gone to" just feels slightly more casual.
