It means nothing realistically. However, in medieval times people were much more superstitious and fond of prophecy, and certain things were considered "omens" even if they were total coincidence.
Stormborn literally means she was born while a storm raged outside Dragonstone. For Targaryen loyalists, they no doubt see this as an omen of the storm Daenerys herself would bring, as though the power of her birth caused the actual storm.

Portents. It supposedly is viewed as meaning the child born that night will be powerful etc. (as with all that horse shit it ignores the fact there would have been thousands of children born that night, most of whom wouldn’t live beyond their first year or two).

I know that her being born during a storm is not her own accomplishment, but in those times it might have been considered as a sign of someone of strong character. Stormborn and all her other titles just describe her and her life.
