Yes, but it will depend on where your flying to.
Some places will require you to show documents before a boarding pass os issued, so even thou you have checked in online doesnt always mean you will also get your boarding pass.
In regards to luggage, some airlines will check the weight of your carry on bags in areas other then the check in desk such as at the boarding gate, just prior to immigration (air asia used to do this at Klia2 - but I've not flown out of Klia2 since covid so no idea if they still do).

Instead of going out of your way to try to bend the "carry on" rules, why don't you just follow the weight limits set by the a1rlie like every body else?
Why not just weigh your bags at home? If you don't have a bathroom scale a luggage scale is inexpensive.
If you check-in online and get your boarding pass electronically, and you skip the airport kiosk and check-in counter and proceed directly to the gate, you WILL need to approach the gate ahead of boarding to present your passport, assuming it's an international flight. They need a minute or two to run it through the system.
You may hear your name called if you don't do this.

This is not universally the case.
I’ve just travelled from one of the larger airports - Sydney - and one of the smallest - Port Vila, and had checked in on line on both this week.
All the statements made by the OP are crap. On line boarding passes are not accepted, you can only enter the secure area, and onto the plane with a conventional boarding pass. All passports are scanned at check in, and also at the gate. Hand luggage is randomly weighed and sized in the terminal.
Clearly things work very differently in different countries.
#9, electronic boarding passes are accepted almost everywhere in Europe - in fact they are pretty much the norm.
#6, at European airports there is no need to approach the agent when you get to the boarding gate. In fact at many airports you now don't interact with the agent at all - you just scan the QR code on your boarding pass.
