Mom wanted a LCB for Mother’s day. I made sure to oblige her as she does like her seafood. The kids visited and it was a beautiful day at the campground. Last Friday was our 38th wedding anniversary, so we took the rig out to the state park 2 miles down the road from the house. Went fishing that day, she always wins the fishing Derby. We had bought this Bloody Mary mix along with a bottle of vodka while in St. Augustine this past winter. I just love the taste of Datil peppers. This bottle did not last long, vodka was great too!

Start with my 38qt stock pot, amped up propane stand burner.
Fill about half way, 4-5 gallons. “boil broth” everything is
Coarse chopped, zest 10 lemons, 2 oranges, 2 limes. Reserve the zest for later.

Low country boil "Broth"

3 TBS black peppercorns
6 oz package garlic, can use full heads, 3 or more
1 lb package swamp-fire boil mix, hot stuff!
1 lb package Zatarains boil mix
8 oz Louisiana crawfish, seafood boil booster
3 large onions skin on
1 bunch of celery
6 large carrots
12 or so bay leaves

Apply high heat and let this get to a rolling boil. Taste for saltiness, add salt if needed. I did not add salt to this mix. The boil mixes do add salt. Boil and stir for 10 minutes. Add potatoes. Taters take the longest to cook depending upon size. I had some very small red and whites from Costco.

10 minutes later add mushrooms. These turn into broth flavor bombs!💣

10 minutes add corn. Some folks add frozen corn at the end to help stop the cook. I do it a little differently.

After 10 more minutes add shrimp, clams, sausage. Turn the burner up high and bring pot to a boil, cook for 1 additional minute.

I added my frozen crab legs at this time.
Shut off the gas, constantly stir the pot while spraying the pot with cold water (garden hose)
Stir and reduce the temp until temp is between 140 and 150F. Stop the spray and add in citrus zest (this really brings the citrus forward, not boiled away). Let the pot soak for 25-30 minutes. Stir occasionally.
Strain and drain pot, we cover the table with butcher paper and enjoy the boil.
This boil was for 5 people, we easily had leftovers for another 1-2 people. Last cook we went a bit
overboard with ingredients, mussels and king crab legs, crawfish. You can add just about anything that makes sense.

We had a great visit with the kids, enjoyed family and family stories. Just do it, enjoy life.

3 lb small, new potatoes
3 lb shrimp
2 ½ lb snow crab clusters
4 lb little neck clams
2 lb smoked sausage
1 ½ lb white mushrooms
4 ears corn, halved
