One of the best "non-traditional" rom-coms ever made. White Castle was a stoner comedy with a romance subplot. This one is a full blown romantic comedy.

Whenever it's just doing a copy of the first film it falters, but when it's doing its own thing, it's really fun. I love this whole trilogy.

Idk I feel like if a movie says "cock-meat sandwich" it stops being a rom-com

Why? Because rom-coms can't be vulgar?

I mean, the plot of the movie is "Guy is in love with girl, goes on trip to win her over, guy's friend ruins it and gets them into a bad situation. And, the friend learns that the girl he was in love with is getting married to an asshole so he does all he can to divert them to stop the wedding." That's like 2 classic rom-com plots mashed into one.
