Got cucumbers? Here’s a great way to use them: cooling Cucumber Juice! This tasty vegetable juice is hydrating and full of spa-like flavor. Our recipe was inspired by an accidental over-buying of cucumbers that made them overflow our produce drawer. Cucumber juice was just the thing! Combine it with green apple for a tasty natural juice that’s ultra refreshing. Here’s how to make this bright healthy drink!

Cucumber juice benefits: why drink it?

First off: why drink this veggie as juice? Well, any cucumber juice benefits you may have heard of are over-hyped. Cucumber juice does not make you skinnier or cure diseases. Much like celery juice, green juices have inflated health claims. Here’s what we do know:

  • Drinking cucumber juice gives you all the benefits of the vegetable: except the fiber. It’s actually even better to eat the whole vegetable. Head over to our Cucumber Recipes for ideas!
  • Cucumber is low in calories but high in nutrients. Drinking the juice gives you all of these vitamins: it’s particularly high in Vitamin K.
  • Cucumber juice is a good alternative to soda or other sugary drinks. Instead of drinking the empty calories and sugar in a soda, reaching for this juice is hands down a better choice!

Ingredients for cucumber juice

Cucumber juice is very easy to make: with just 2 ingredients! You could make it with straight celery, but we like adding green apple to make the flavor a little sweeter. It’s a great way to reduce food waste and use up cucumbers in your produce bin (exactly why we first made this recipe!). Here’s what you’ll need:

  • Cucumber: English cucumber is your best choice, but you can also use standard cucumber! More below.
  • Green apple: Green apple adds a sweet tart flavor and even more nutrients.
  • Lemon or lime (optional): Citrus adds a nice tang, but it’s totally optional.

English cucumber vs standard cucumber

This cucumber juice is easiest with an English cucumber: because you don’t have to peel it! Alex and I typically buy English cucumbers because we like the flavor so much better. You can definitely use standard cucumber here: just peel it before using. But most of the nutrients in a cucumber are contained in the skin, so it’s another pro for using an English cucumber if you can find it! Here are the major differences between English cucumber vs standard cucumber:

  • English cucumber is long with very thin skin, and the seeds are small. The flavor is sweeter than the standard cucumber, and it doesn’t need to be peeled or seeded before eating. Because the thin skin is so fragile, it’s sold with a plastic covering in the grocery store.
  • Standard slicing cucumber is shorter, with very thick, dark green skin and very large seeds. The thick skin and seeds can be bitter, so they’re often removed when cooking. We recommend removing it for this cucumber juice recipe.

Variations: flavor add-ins!

This basic cucumber juice recipe tastes great on its own: but it’s always fun to make it fancier! We like adding things like fruit or fresh ginger to our juice recipes to make them taste more interesting. Here are some ideas for this cucumber juice:

  • Green juice: Add greens! Go to Green Juice.
  • Ginger cucumber: Add ½ teaspoon peeled and grated ginger.
  • Pineapple cucumber: Add 1 cup chopped fresh or canned pineapple.
  • Pear cucumber: Use 1 unpeeled pear instead of the apple.
  • Celery cucumber: Add a few chopped ribs of celery.

How to make cucumber juice (in a blender or juicer)

Ready to make cucumber juice? There’s no need for a juicer: but you can use one if you have it! Simply pass all the ingredients in the recipe below through your juicer. Here’s how to make cucumber juice in a blender:

  • Blend all ingredients on high until pureed and smooth. It will look like a thick smoothie.
  • Strain! This is the important part. Strain the juice through a fine mesh sieve or using a nut milk bag. You can also use a cheesecloth and squeeze it to strain out the juice. Discard that pulp, or see below for some uses.
  • Chill! Serve the juice over ice, or better yet: chill it in the refrigerator a few hours before enjoying.

Description

This cooling cucumber juice recipe is easy to whip up in a blender: no juicer needed! It’s a great way to use this hydrating vegetable.


Ingredients

Scale
  • 1 large English cucumber (or 1 to 1/2 standard cucumbers)*
  • 1 green apple
  • 1 cup water
  • 1 pinch salt
  • ½ tablespoon lemon or lime juice (optional)

Instructions

  1. If using a standard cucumber, peel it (no need to peel for an English cucumber!). Roughly chop the cucumber. Chop the apple, keeping the skin on. 
  2. Place the cucumber, apple, water, and salt in a blender. Blend on high until pureed and a juice forms.
  3. Pass the juice through a fine mesh sieve or a nut milk bag to strain out the pulp. Discard the pulp (or use: see ideas above). Stir in the fresh lemon or lime juice (add more if desired). Drink immediately over ice, or chill before drinking.

Notes

*We prefer using English cucumber because you can make the juice without peeling the cucumber.

    I love your Cucumber recipes. No one else has as many Cucumber recipes as you do. Plus you have different ones. I tried the Cucumber Lemonade Its Fantastic. I changed one ingredient. I don’t use white sugar I used honey. I left the skin on my cucumbers because it helps my blood vessels relax and it gets all of the fat out of my blood vessels. I have the blood tests to prove it.
    So my cucumber Lemonade is green.

    Good Afternoon my name is Marceleen I love juicing however,; I have a juicer do I need to add water after I’m finish juicing, I do not pedal any of my veggies, and I don’t use the English cucumber. Let me know what I should do.

      If you have a juicer, you do not need to add water after juicing. If you use a standard cucumber not an English cucumber, we recommend peeling it: but if you prefer not to it may taste more bitter. Let us know what you think!
