Shrek is a blue collar ogre movie, but it's fantasy not sci fi.

I think Interstellar should be added since Cooper is a farmer when he gets enlisted by NASA, and his farm and farming in general are a big part of the plot.

You might be able to make a case for Starship Troopers as well.

I weirdly think Aliens is more blue collar than Alien.

Space Sweepers, Serenity, 5th Element, Ice Pirates. There's a new animated movie Mars Express that fits the bill too.
