Mother’s Day is all about letting mom do less, even kids can tackle some of these brunch recipes.
Hannaford’s resident chef Dorene Mills paid WMTW a visit to share some delicious recipes for Sunday. To her, the recipes are all about making the experience as hands-off for mom as she wants it.
"I was thinking of some recipes that I could easily tell my kids how to make and not necessarily have to be there with them to make it," she said.
Starting with a brunch board, something that doesn’t require much of any prep. On her brunch board, Dorene had cheeses, croissants, bagels, fruits, and yogurt. The ingredients can be swapped out based on mom’s preferences, but if you just spend some time putting the ingredients together nicely it can be a great way to spoil mom.
"That way, mom can come along and just graze, and just kind of build whatever she would like to eat at the moment," Mills said.
For something a bit more involved, you can add a twist to waffles. When mixing together the batter you can mix in shredded cheese and chopped bacon to make them savory.
Then, take it a step further and use the waffles to make a club sandwich; throw in some avocado, lettuce, tomatoes, and sauces of your choice.
"The waffle honestly is just such a fun food item," Mills said. "It really just makes a fun easy lunch for your mom."
For something a bit simpler, it doesn’t get much simpler than her ham and cheese biscuit swirls. It literally just takes ham, cheese, and biscuit dough. Spread out the dough to about 4-5 inches in length, you can place the ham and cheese on top and then roll it all together. Cut it in half, and then just throw it in the oven.
"Ham and cheese, what's easier? The kids can easily make it. The kids are in there, they're putting their heart into it for mom, and only a few ingredients so very easy to come together," Mills said.
If you think mom would prefer something lighter, why not level up Bruschetta with some shrimp added in?
"This just kind of takes it up a notch, adding the cooked shrimp to it where it really actually makes it more of a meal," Mills said.
Finally, Mother’s Day drinks. Mills says bellinis are a good brunch cocktail to replace mimosas. For mom’s who would prefer a non-alcoholic option grab seltzer water, muddle some blackberries or fruit of your choice into the drink, and toss in some mojito mint leaves.
As a mother herself, Mills says Mother’s Day is easy to ace.
"Just... let her sit back. Take something off her plate for the day and just tell her you love her," she said.
