These 3-Ingredient Peanut Butter Cookies are a perfect blend of creamy peanut butter, sweet sugar, and a hint of egg, all baked to golden perfection.

Ingredients

  • peanut butter (I use creamy Jif or Skippy)
  • white sugar
  • egg

Step by step

  1. Preheat the oven and line a cookie sheet with parchment paper.
  2. Simply add all 3 of the ingredients together in a large bowl. Mix until well combined and the dough has thickened a bit.
  3. Roll out with a spoon or cookie scoop into a ball. Place the dough balls on a baking sheet.
  4. Next, using a fork create a criss-cross pattern.
  5. Bake for 8-10 minutes. Allow to cool on a wire rack for a few minutes before enjoying!

Tips for best results

  • Use creamy peanut butter for a smooth texture
  • Do not use natural peanut butter as the texture will not be the same due to the oil separation
  • I do not recommend using another nut butter (like cashew butter or almond butter) in this recipe, with only 3 ingredients it will drqstically affect the taste of the cookie to make any substitutions.
  • Don’t overmix the dough, or your cookies might turn out tough

Variations

  • Add chocolate chips for a gooey twist
  • Sprinkle some sea salt on top for a sweet and salty combo
  • Drizzle with melted chocolate for an indulgent touch

Storage

If you manage to resist eating them all in one sitting (trust me, it’s hard), store leftover cookies in an airtight container at room temperature for up to a week.

They also freeze well, so feel free to stash some away for later cravings in a freezer bag or freezer-safe container.

You can also freeze the cookie dough before baking. Simply roll into balls and freeze on a plate or tray, then transfer to a freezer bag. You can bake them directly from frozen by extending the baking time a few minutes or thaw overnight in the refrigerator and bake as directed.
