Dashiro (だし廊) is a dashi specialty shop that calls itself a "Dashi Sommelier", offering various types of dashi based ramen. While dashi is an iconic ingredient in Japanese cooking, there are many different types of dashi and Dashiro plays almost the whole range of dashi types.
When I went, their range included flying fish niboshi dashi ramen, clam dashi ramen, chicken dashi ramen, shrimp dashi ramen and veggie dashi ramen. They pride themselves with their large menu and their variety. Dashiro even offers a button for Muslim friendly ramen, which I guess means halal.
I went for their clam dashi shio soba (貝だし塩そば) with extra chashu and an egg. It naturally already comes with a clam filled with a mix of miso and clam meat. The soup is a mix of a very decadent clam broth, strong mussel flavors, and an impactful shio tare seasoning.
The kicker is the miso and clam meat mix in the mussel shell, which increases the impact one more time once it is mixed into the soup.
The soup is paired with a wide and flat noodle, a relatively unusual combination for a clam based ramen soup. But for me, maybe because I am a fan of flat noodles, they worked great in this bowl.
