We will be tendering at Dun Laoghaire from a Princess cruise and are looking for the quickest and easiest way to get to the Guiness Storehouse. We will be arriving on a Sunday morning. There appears to be several options, combining rail, tram, bus. Just looking for any advice or would it be easier/better to just hire a tax from the port to the Storehouse?

If you take the Dart, which is walking distance from the port, you would still need to take the bus to get to the storehouse after getting off Dart. Like you said, there are other options, but car service would be more convenient.
The 'quickest and easiest' way with a short window of time would be to take a taxi. Public transport will involve a DART (Dublin Area Rapid Transit) to the city centre and then either a bus or a tram to the Guinness Storehouse. At least on a Sunday morning roads and public transport won't be full of commuters but services are less frequent on Sundays.
You might also consider how you will get back afterwards. You could arrange for a taxi to pick you up at an appointed time. Or you could stroll back into the city centre, passing some sights on the way. It's also a good route if you are interested in lunch or refreshments, shopping (Grafton St and surrounds) or exploring. Then when you're ready to return you could pick up a taxi from the taxi rank at College Green by Trinity College or walk to either Tara St or Pearse stations for a DART straight back to Dun Laoghaire. The DART station is right by the port.
