Fruits veggies and ice

Hello! Looking forward to our June trip to Peru!

I understand one part of food safety is avoiding unfiltered water (ice, fruits/veggies washed in unfiltered wate, etc).

My question is how do you know or what should you assume and is it rude to ask if salads/veggies, ice are washed/made with filtered water?

I did ten days in Africa once with no fresh fruits/veggies and my GI tract was very unhappy! Would like to be able to eat them safely.

We will be at a rainforest lodge out of Puerto Maldonado, in Cusco (looking at restaurants like Jacks Cafe, Inka Grill, Organika, Limbus, Museo del Pisco), Urubamba, Chinchero, Ollantaytambo.

Is most restaurant cheese pasteurized?
