I’d really love to get in to avantasia but don’t even know where to begin. What are some staples that an edguy fan would appreciate? I stumbled across “promised land” and loved it but don’t know where to go from here. I want my early impressions to pull me in if possible :)

You can maybe start with The Scarecrow (Twisted Mind/title track) for the typical Avantasia sound.
Listen to The Metal Opera (1 is better than 2) for the early sound which will remind you a little more of Edguy, particularly up to Hellfire Club. My favorites are the title track, Sign of the Cross and Reach Out for the Light.
1 is def better than 2 but The Seven Angels is one of the best on both
I only really know Avantasia's newer albums (basically the last three, Ghostlights, Moonglow, and Paranormal), but from what I have heard of the earlier stuff, I feel the early Avantasia sounds more like Edguy.
I don't really know where the change happened, but by Ghostlights, Avantasia is definitely its own thing at that point.
Edit: For recommendations, I really enjoy Ghostlights. It's what really got me into Avantasia in the first place.
The change definitely started to shift more with The Wicked Trilogy (Scarecrow, The Wicked Symphony, Angel of Babylon) though it really was with The Mystery of Time where Avantasia absolutely became entirely its own thing and overtook Edguy.
Seconding Ghostlights, it's one of my favorite albums of all time.
Give metal opera 1 and 2 a play straight through. Its one of my fave "musicals. The story "loosely" based on the witch trials at Fulda and Mainz(where Tobi is from). The main character is trying to get into the dominican order, finds all is not as it seems, and goes on adventure from there.

Songs I'd recommend to get a feeling across thebord: Glory of Rome, Avantasia, scarecrow, another angel down, angel of babylon, wastelands, dying for an angel, the edge, promised land, where the clock hands freeze, what's left of me, ghostlights, lucifer, alchemy, ghost in the moon, the moonflower society.

My favorite song is savior in the clockwork. Not sure if you'd like it as many people don't for some reason.

Savior in the clockwork is quite the journey. I really liked it. I’m a sucker for long songs but this one is particularly well done.

If you like the longer songs, check out Let the Storm Descend Upon You from tje Ghostlights album. It's one of my favorite Avantasia tracks ever.
Listen to the whole Mystery of Time album and make up your mind. That's the best they ever got

Yeah Moonglow is pretty close in quality to Mystery of Time. Raven Child especially <3
Metal Opera 1/2 have their own sound, but I’ve yet to get into them enough to be of help
Scarecrow feels like the traditional Avantasia sound, with songs like The Toy Factory standing out as more thrashy almost
Wicked Symphony is great, more thrash but also more symphonic in a way
Angel of Babylon feels almost electronic? Idk most of the songs but the ones I do know are good (Death is Just A Feeling is good once you get into it)
Mystery of Time/Ghostlights have their symphonic parts but feel most like thrash/power, which would be a great place to start with them imo
Moonglow/Paranormal are a lot more symphonic/power metal, but still amazing nonetheless
No matter what, if you like power metal at all then you’ll find something here that you like

The Metal Opera should be closer to what you're used to, but if you want that modern Avantasia sound, I'd say dip your toes into The Scarecrow, where the definitive style starts to take shape. The title track is one of my favorites and is one of the heights of the group.
Every album has amazing songs on them, but it depends what type of symphonic metal you prefer.
I like early nightwish, early within temptation, all epica, all edguy, early Kamelot, early sonata arctica. Stuff like that.
