Does anyone know how to cook party jollof rice without burning the pot?

Everytime I try to cook jollof rice I burn the pot and it’s a problem to clean anyone know how to cook jollof rice that taste really good without burning the pot?

I called my mum and asked for you haha because I too prefer less burnt jollof

  • burning is caused by slow cooking and less liquid/water, and very high heat

  • to reduce burning, more water and cook on medium heat

  • POTS MATTER! Heavier, steel/iron pots are better for heat distribution. Those light Teflon things are going to do you dirty

  • even more unorthodox, prepare jollof as normal just cook it in the oven (although my mum has not personally tried this)

but she did say that the burning is a bit more traditional lol, I hope this helps

if there's no burn on the bottom of the pot then it's not jollof

Get a nonstick pot

You can try and roast the peppers and onions and tomatoes on the grill.

Lower the heat after the water is halfway gone while cooking.

Use a nonstick pot, cook on a lower heat, and add liquid smoke if it’s missing the smoky/burnt flavor.

Tell me more about this liquid smoke. Rice don expensive ooo

I’ve used liquid smoke for meat (BBQ) but it would be weird in jollof rice. For a classic smoky flavor, especially if you are from the east or serving guests of eastern extraction add a combo of crayfish and dried powdered bala fish.

I tried Stubbs liquid smoke and it definitely doesn’t work for jollof. I can’t comment on other brands of liquid smoke though. I’ve tried so many smoky jollof ‘hacks’ and burning the rice is the only effective method tbh.

  1. If you can, use a non-stick pot.

  2. When you add the uncooked rice to the pepper, add lots of water that’ll cover majority of the cook for the rice.

  3. Reduce heat level towards final stages of cooking, Steaming Stage.
