Hard to believe that Walter would have used superfluous quotations.
If you want to dig, i would guess written by old assistant after they caught their fingers and instead of sympathy Walter said "put a sign up to watch your fingers then, 'cause of the 'heavy doors'" with heavy doors said sarcastically, like if you are a moron who needs a sign to remind them, put a bloody sign up.

No doubt written by Walter after a particularly good batch of LSD. Exclamation marks would have been more appropriate for a warning. Maybe he was quoting one of the voices in his head.
