the best are known - if not to visitors, to locals.
Here is something I suggest - read the LVRJ's "best of" winners - the STAFF PICKS!!. They are usually spot on - sometimes the same as the reader's (although reader's pick Olive Garden as good Italian-be warned!)
Between the staff picks and the reader picks you'll have many options.

Most if not all will be off strip and some will be way off strip..so include cabfare in equation.
Well, not unknown, but certainly less well known is the Golden Steer Steakhouse on Sahara. Very good steaks and sides, excellent service, old school atmosphere. The celebrities really used to eat here - I sat at Joe DiMaggio's table. One tip: The desserts are ordinary and not made fresh, so don't save room.

while the places suggested so far are good - none are unknown, are discussed here and other places frequently.
One that is not mentioned much is Rocco's - again not unknown in LV, maybe is to most tourists. On Charleston, might be worth a stop if you're in the area.
